30 Day Shred: I'm LOVING this so far. It's such a challenge. I can't wait to progress to the next level to see if I can notice any improvements to strength.
Hot Yoga: I'm sure after reading my post on hot yoga, you know my true feelings about it! It was hard. It was sweaty. It was torturous! But it was also the most intense, yet at the same time calming workout I have ever done. Hmm...calming and intense. Is that possible?
My Favorite Sweet Potatoe Fries
I never knew sweet potatoes could be so good. I love them! For the sweet potato fries, just cut up 1 sweet potato into fry slices. Toss them in a bowl with 2 Tbs of olive oil and any time of seasoning you like to use to your tastes. I like to use a steak seasoning when making the fries. When the fries are evening coated, spread them out on a cookie sheet and bake at 450 for 15 minutes!
Apple Pie Yogurt
I ran across this recipe on one of my Mediterranean recipe websites and love it! All you need is half of an apple, greek yogurt, and some cinnamon. Cut the apple into bite size pieces and microwave them in a bowl for 60 seconds (or until soft). Add a 1/2 cup of greek yogurt to the apples. Sprinkle cinnamon on top, stir and enjoy! Greek yogurt taste more bitter than the yogurt Americans are used to eating, so if you need to, you can add a little bit of sugar.
Easy Grapefruit Avacado Slaw
I've used this receipe in several ways. It is very good served over fish and chicken. Or, you can eat it alone with crackers, tortilla chips, or pita wedges. If you want to spice it up, just add a half a jalapeno.
Ingredients
1 Grapefruit peeled with the grapefruit separated from the membrane and separated into small bite size pieces
1 Avacado cut into bite size pieces
Diced red onion to taste
Chopped cilantro to taste
Directions
Mix all ingredients together, eat, and enjoy!
Yummy Mediterranean Pizza
Ingredients
1 Wholewheat pizza crust
2 Tbs Olive oil
1 Clove garlic, diced
1/4 C tomato sauce
1 Roma tomato, sliced
1 Portobello mushroom top, sliced
1/4 C Kalamata olives, sliced
1/4 C Red onion, sliced
1 C Feta cheese
Directions
Sautee' the portobello mushroom in olive oil and garlic. Evenly spread the tomato sauce over the pizza crust and then arrange veggies on the crust. Sprinkle the feta over the veggies. Bake at 450 for 11 minutes. For an extra kick, you can add fresh basil leaves to the mix.
